Also known as Mediterranean sea bass, our bronzini is imported from Greece. Common in Indian and North African cuisine, preserved lemon is a condiment containing whole lemons or sections that are pickled in a brine of water, lemon juice, and salt with occasional spices included. The pulp of preserved lemon can be used in stews and sauces, but the peel (zest and pith together) is most valued. The flavor is mildly tart but intensely lemony, making dishes especially fragrant and lemon-scented.
