1 cup water
3 tablespoons white wine vinegar
3/4 teaspoon salt
1 garlic clove, minced
1/4 teaspoon ground black pepper
1 cup medium bulgur
1/3 cup red radishes, diced
1/3 cup celery leaves & tender stalks, sliced
1/4 cup green onions, sliced
3 tablespoons olive oil
juice of 1 lemon
1. Bring the water and the next four ingredients to a boil in a medium sauce pan.
2. Add the bulgur and stir. Place a lid on the pot and lower the heat to low. Allow to simmer on low for 3 minutes.
3. Remove from heat and let sit undisturbed for another 10 minutes. Remove the lid and fluff bulgur with a fork. Cool the bulgur.
4. Add the rest of the ingredients, lightly tossing to distribute the dressing. Serve at room temperature or chilled.
