Duchesse Pressed Cookies

An easy and very versatile cookie to add to your holiday baking this year.


1 cup unsalted butter, softened
1/2 cup sugar
1 egg, room temperature
1-1/4 cup all-purpose flour
powdered sugar

lemon or orange zest, or vanilla extract
pastry bag

chocolate ganache


Preheat oven to 325° F.  Line 2 cookie sheets with parchment paper and set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light, about 1 minute.  Add the egg and beat until incorporated. Add the zest or vanilla extract, if desired, and beat until combined. Reduce the speed to low, add the flour mixture, and beat until combined. Scoop or pipe the mixture onto parchment-lined baking sheets. Bake in the center of the oven until golden brown, 8 to 10 minutes. 

Remove and cool.  Dust a fine layer of powdered sugar over cookies and top with jelly, jam, Nutella or chocolate ganache.
