For Grilled Pineapple:
1 pineapple, peeled, trimmed, cored and sliced into rings
kosher salt, as needed
ground black pepper, as needed
ground smoked paprika, as needed
vegetable oil, as needed
1 cup pineapple, grilled and small dice (recipe below)
16 ozs lebne, yogurt or sour cream, plain
1 tablespoon cilantro leaves, fresh, chopped
1/4 teaspoon crushed red pepper
2 teaspoons fresh lime juice
1 pinch kosher salt
2 pinches dried lemon, crushed or ground
1 pinch ground white pepper
For Grilled Pineapple: Lightly sprinkle seasoning on pineapple until evenly coated. Brush or drizzle oil over pineapple. Place pineapple on a hot grill and allow grill marks to form (lightly char on both sides). Remove from heat and allow to cool. Cut pineapple to a medium dice.
For Dip: Combine all ingredients in mixing bowl. Fold together until evenly covered. Chill for 30 minutes. Serve cold with chips or baguettes.
