Hoppin’ Matt (New Year’s Black-eyed Peas)

A great simple recipe that is a healthy and nutritious way to kickstart the new year! This is our version of Hoppin' Johns, and we named it in honor of our chef, Matt Johnson.

Ingredients


1-1/2 cup black eyed peas- dried peas soak overnight or you can use canned (Phoenicia has both!)
1 pound ham hocks (or substitute turkey bacon)
1 each chopped onion
4 cups water
1-1/2 cup long grain rice
1/2 teaspoon red pepper flakes (crushed)
salt & pepper to taste


Directions


1. In a large pan place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil. Reduce heat to medium/low and cook for 1-1/2 hours. (LESS TIME FOR CANNED)
2. Remove ham hock and cut meat into pieces. Return meat to pot. Stir in rice, cover and cook until rice is tender, about 20-25 minutes.
