Quinoa Salad

Quinoa is one of nature's superfoods and a busy cook's dream: it's ready in 15 minutes! This nutty-tasting, gluten-free grain delivers a healthy dose of fiber and is one of the only plant foods that is a complete protein, since it provides all 9 essential amino acids.

6-8

Ingredients


4 cups quinoa
6 cups water or broth
2 cups cucumber, diced
2 bunches green onion, chopped
1 ea red pepper, diced
1 ea yellow pepper, diced
1 ea orange pepper, diced
1 bunch flat leaf parsley, chopped
1/2 cup kalamata olives, chopped
1 cup feta, small dice


1/4 cup lemon juice
3/4 cup olive oil


Directions


Bring quinoa and liquid to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork and set aside to cool.


Once cooled, gently toss all of the ingredients, except lemon juice and olive oil, together.


To make the dressing, whisk together lemon juice and oil, then gently toss with the salad. Plate and serve.
