1 whole chicken
3 tablespoons harissa paste (Piquant brand)
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon kosher salt
1/2 tablespoon ground black pepper
Roland brand balsamic glaze
In a small bowl mix the harissa, oil and lemon juice. Rub the chicken with the harissa mixture and then season with salt and pepper.
Place the chicken in a roasting pan and place in a preheated, 375°F oven for 45 to 60 minutes (depending on the size of your chicken) or until the internal temperature of the chicken reaches 160°F. Remove the chicken from the oven and let rest for at least 20 minutes before carving. Serve with a mixed green salad and drizzle with the balsamic glaze.
